This is one of my favorite recipes because I am a pizza kinda girl! If you are on my website you probably know by now I am a full-time agent. I don't often have that much time to be preparing extravagant meals when I get home during the week. Also, I'm all about the healthy meals, although, every once in a while I do love to have cheat meals. One of my favorites dishes includes food that doesn't involve meat. Purely because, there is such a variety of vegetables to experiment with, all with different textures, flavors, and benefits to compliment eating a plant-based diet.
This Smoky-sweet with Five Cheese Pizza Recipe I created is pure culinary bliss. Let me start by saying; DO NOT BE ALARMED BY THE SMOKY SWEET aspect. Though it does state "smoky-sweet", It's not too much sweet but more of a subtly sweet accent underlying the smoky flavors, this is down to the sun-dried tomatoes along with red onions roasted as the toppings of the pizza.
Now let's get to the actual ingredients to make this recipe!
Depending on how much time you have, you can either make the pastry dough from scratch or you can buy shop bought ready-made pastry.
To make Pastry:
Jus-Roll Pastry -375 grams
Flour - 360 grams
Eggs - 2 free range
175 grams of cool water
To make the sauce:
Tomatoes- 4 average sized
Olive Oil- 25 grams
Butter- 25 grams
Salt & Pepper.
Dijon Mustard - 1 tablespoon
Roasted Fresh Garlic - 1 clove
Basil leaves -equal amount proportion to ingredients.
Making Tomato Sauce Base:
The sauce is pretty simple, it's a matter of steaming the fresh tomatoes, peeling off the skin, then place tomatoes into a blender. Add the rest of the ingredients listed above one by one. Once that is blending, slowly add the olive oil until you have a smooth and thick texture. Then leave to cool.
Here is the fun part! For this pizza dish to work, you have to make sure the cherry tomatoes are extremely well prepared, and here is how you do it. One can either buy cherry tomatoes that are sun-dried at the supermarket -which is perfectly fine (I don't judge, not everyone has time to prepare from scratch). Depending on how busy my schedule is, I like to get hands-on and make my very own sun-dried tomatoes.
How To: Cut each cherry tomatoes in half, place into a foiled oven tray brushed with olive oil to avoid sticking, add salt and pepper, and leave to roast in the oven for 15 to 30 minutes on a gas mark 160°. Once the tomatoes have roasted and are a deep rich red hue, take them out the oven and leave to cool down.
-on the side, cut up red onions into rings and set aside.
Making The Pizza:
Roll out the pastry onto a floured wooden block or a nonstick/ butter greased baking tray -whichever one suits best. Add the tomato sauce onto the pastry base, then add on top of that three to five kinds of cheese of your choosing. I love mozzarella, mild cheddar cheese, Parmesan cheese and Red Leicester cheese.
Lastly, to finish, add the cherry tomatoes and the red onions on top -then sprinkle a little more sea salt and pepper.
Places in the oven and bake for 10 to 12 minutes (until pizza base is cooked and cheese is golden brown).
As you take the pizza out the oven -whilst it is still hot, add pomegranates seeds on top of the pizza before it has cooled down. Pomegranate seeds add an exotic expensive jeweled look to the pizza, along with the pomegranate flavor against the cream velvety cheese texture underneath the smokiness of the cherry tomatoes, it compliments beautifully on the taste palette and a must try combo.
As simple as that, You have your Smoky Sweet Jewelled Pizza complete!
